The Featured Recipe today is the Matzatlan Margarita. This is an easy recipe to make and great for parties. Because the recipe doesn't require a salted rim, it can be conveniently served in disposable plastic cups — a real advantage for pool parties were glass is not welcome. It can also be made in quantity to be served from a punch bowl. Float ice rings and lime slices for a classy garnish. Don't let the beer ingredient fool you...this really is a great margarita!
1 can of Beer (12 oz.)
1 can frozen Limeade concentrate (12 oz.), thawing
6 - 9 oz. of Tequila
In a pitcher, use a spoon to mix the limeade and tequila together. To measure the tequila, fill the limeade can half to three-quarters full. Once the tequila and the limeade are mixed, add the beer and stir gently. DO NOT USE A HAND MIXER OR BLENDER with this recipe. Pour over crushed ice for a frozen margarita feel or over cubed ice for a margarita on the rocks.
