Weigh-in Night Fish

Ingredients:
1 1/2 pounds uncooked cod, 4 6oz fillets
4 Tbsp shredded Parmesan cheese
1 tsp garlic powder
2 tsp dried basil
butter-flavor cooking spray
salt & pepper, to taste
4 medium yellow summer squash, sliced into disks
2 medium zucchini, sliced into disks
8 oz baby carrots, sliced lengthwise
2 cup broccoli florets
McCormick's Vegetable Supreme Buttery Herbs Seasoning
I Can't Believe It's Not Butter spray, optional

Instructions:
Preheat oven broiler and broiler pan on high.  Slice all vegetables and set aside.  Place fish on sprayed, heated broiler pan and lightly spray each fillet with butter-flavored cooking spray.  Broil fish for about 5 minutes.  Turn fish over and sprinkle each fillet with ¼ tsp of garlic powder, ½ tsp of dried basil, salt and pepper to taste.  Lgihtly spray each fillet again with the butter-flavored cooking spray.  Broil for another 5 minutes.  Meanwhile, place all vegetables in a steamer basket over boiling water and sprinkle with McCormick's seasoning.  Steam until crisp tender, about 5 minutes, and remove from heat and spray with I Can't Believe It's Not Butter spray, if desired.  During the last 2 minutes of broil time for the fish, sprinkle each fillet with 1 Tbsp of shredded Parmesan cheese.  Fish is done when it flakes easily with a fork and cheese is boiling and beginning to brown.

Yields 1 fillet and a ¼ of the veggie medley per serving.

Special Information:
Cod has a POINTS value of 3 per 6 oz serving, the veggies and cheese make up the rest of the POINTS in this recipe.  Every 2 oz of cod has a POINTS value of 1.  If you desire a bigger meal with more protein, increase the size of the fillets you use WITHOUT increasing the amount of cheese and adjust the POINTS value accordingly.
