Turkey Waldorf Salad

Ingredients:
2 Tbsp light mayonnaise
2 Tbsp fat-free sour cream
½ tsp poultry seasoning
1 tsp apple cider vinegar
¼ tsp table salt
¼ tsp pepper
6 oz roasted turkey breast
1/2 cup celery, chopped
1/3 cup grapes, halved
1 small apple, cored and chopped with skin
1/4 cup craisins (dried sweetned cranberries)
1 Tbsp chopped walnuts
Instructions:
In a medium sized bowl, combine sour cream, mayonnaise, poultry seasoning, vinegar, salt and pepper. Stir well. Add turkey, celery, grapes, apple, craisins, and walnuts. Toss gently to coat. Cover and chill. Serve in a lettuce cup or on a bed of butter lettuce.
Yields about 1½ cups per serving.
Special Information:
This is a great way to use leftover holiday turkey. However, if you prefer, you may use cooked chicken breast. I use green grapes and sweet red apple but you can substitute red or black grapes (just make sure they're seedless) and tart green apples. Try substituting 1 tsp of dried dill, 2 tsp of fresh dill, or 1 tsp of dried marjoram for the poultry seasoning and 1 tsp of lemon juice for the vinegar. You may also use raisins in place of the craisins and chopped pecans or slivered almonds in place of the walnuts. There are lots of delicious options with this recipe.
