Turkey Meatloaf Muffins a.k.a. Turkeyballs

Ingredients:
1 box Stove Top Stuffing for Turkey, dry mix
½ cup celery, minced
1¼ lbs. lean ground turkey, 7% fat or less
1/3 cup Refrigerated Egg Whites or 2 large egg whites
Instructions:
In a large bowl, mix together turkey, stuffing mix, celery, and egg whites. Mix well. Divied into 12 equal pieces and roll into balls. Spray 12 muffin tins with nonstick cooking spray. Place 1 turkey ball into each cup. Spray the tops of each ball with nonsitck cooking spray. Bake and serve.
Bake at 350º for 30 minutes
Special Information:
These are so easy to make, they're delicious, and they're filling. Serve 2 or 3 with a green salad and steamed vegetables and you've got a quick, low POINTS meal. They also freeze well and can be heated up in the microwave for a meal on the run. I use silicone muffin cups on a cookie sheet to bake mine so clean up is a breeze, too.
