Sweet Potato Casserole

Ingredients:
40 oz canned sweet potatoes, drained and mashed
¼ cup light orange juice
8 Tbsp Kraft Jet-Puffed Marshmallow crème
¼ cup fat-free egg substitute
1 Tbsp light butter, melted
¼ tsp table salt
½ tsp allspice
1½ cups miniature marshmallows

Instructions:
Preheat oven to 400° and spray a shallow baking dish with non-stick spray.

Combine  mashed sweet potatoes, butter, orange juice, salt, allspice, and marshmallow crème in a large bowl.  Beat in egg substitute.  Pile sweet potatoes in the prepared baking dish.  Bake for 25 minutes.  Top with miniature marshmallows and continue baking for 5 to 8 minutes.  Marshmallows will turn a golden brown.  To brown faster, place baking dish under broiler for about 4 minutes.

Special Information:
If you decide to brown under the broiler, watch the marshmallows closely as they will burn quickly.
