Spinach Watermelon Salad

Ingredients:
4 cups spinach, torn
4 cups romaine lettuce, thinly sliced
2 cups watermelon balls
1 cups strawberries, sliced
½ cup cucumber, sliced
½ cup Vidalia onions, thinly sliced rings
1 Tbsp honey
1 Tbsp balsamic vinegar
1 Tbsp water
1 ½ tsp olive oil
½ tsp lemon juice, bottled
¼ tsp dried tarragon or 2 tsp fresh, chopped
Salt to taste
Instructions:
In a small bowl, combine the honey, vinegar, water, olive oil, lemon juice, tarragon, and salt. Stir well with a whisk and set aside. In a large bowl, combine spinach, lettuce, watermelon balls, strawberries, cucumber, and onion. Drizzle dressing over salad and gently toss. Serve immediately.
Yields 2 cups per serving.
Special Information:
In a pinch, omit the honey balsamic dressing and use 3 tablespoons of Marzetti's Light Berry Balsamic dressing. It's wonderful, fast, and doesn't change the POINTS value per serving.
