Sloppy Joe Filling

Unofficial POINTS per serving: 3
Ingredients:
1 pound uncooked lean ground beef (with 7% fat or less)
1 medium bell pepper, seeded and diced
1 medium sweet red pepper, seeded and diced
1 medium onion, diced
1 cup barbeque sauce
¼ tsp cayenne pepper (optional)

Instructions:
Brown beef in a large, nonstick skillet over medium heat for about 8 to 10 minutes.  Drain off any liquid.  Add peppers and onion and cook until tender, about 3 minutes.  Add barbeque sauce and cayenne pepper, if desired.  Heat thoroughly, stirring frequently, about 2 minutes.  Divide into 6 equal portions and serve.

Special Information:
Obviously, this filling needs to be served on or in something. Look for light, whole wheat hamburger buns with a POINTS value of 3 or less. If you can find buns with a POINTS value of 1, then you can divide this recipe into 4 servings instead of 6.  Each filling serving would then be 5 POINTS.
