Shrimp Marinara

Ingredients:
4 tsp olive oil
1½ lbs. shrimp, peeled and deveined (31/35 prefered)
2 garlic cloves, minced
1 cup dry white wine
1 can diced tomatoes, 14½ oz size not drained
2 Tbsp tomato paste
1 Tbsp dried parsley, or 2 Tbsp fresh parsley
2 tsp dried oregano, or to taste
2 tsp dried basil, or to taste
¼ tsp salt, or to taste
¼ tsp black pepper, or to taste
¼ tsp crushed red pepper flakes, or to taste
4 small yellow squash or zucchini, sliced ¼" to ½" thick
1 cup mushrooms, sliced
3 medium scallions, chopped
Instructions:
In a large nonstick skillet, heat oil and then add shrimp, garlic, mushrooms, and scallions. Sauté until shrimp begin to turn pink. Add squash and continue to sauté until shrimp is completely pink. Stir in the tomatoes (with juice), wine, tomato paste, parsley, and all spices. Bring to a boil and cook, stirring frequently, until the sauce thickens - about 5 minutes. Serve immediately.
