Polynesian Chicken

Ingredients:
1 ½ lbs uncooked boneless, skinless chicken breast (4 6oz breast halves)
8 oz Dole Canned Pineapple Chunks in Juice
1 cup Smucker's Sugar Free Apricot Preserves
2 Tbsp low-sodium soy sauce
8 oz baby carrots, sliced length-wise
1 medium sweet red pepper, seeded and chopped
1 small onion, chopped
2 medium scallion, chopped (optional)
2 garlic clove, minced
1 tsp ground ginger
Instructions:
Spray large frying pan with Pam spray. Begin browning onion and garlic. Add chicken breasts and brown both sides, about 4 minutes per side. You may need to add small amounts of water during cooking to keep food from burning or drying out. Add sliced carrots, red peppers, and ginger. Drain pineapple juice into cooking mixture. Mix preserves, soy sauce, and pineapple chunks together in a separate bowl. Once mixed, pour onto cooking meat and vegetables. Continue cooking until chicken is done and sauce has thickened. Total cooking time about 20 minutes.
Special Information:
It is easy to vary the number of POINTS in this recipe by the amount of chicken that you use. Using only 1 pound of chicken will reduce the POINTS value to 4 per serving. You can also use chicken tenderloins instead of half breasts.
Another tasty alternative is to use 1 pound of boneless, skinless chicken thighs. The POINTS value when using thigh meat is 5 per serving.
Serving Suggestions:
Though wonderful by itself, this Polynesian Chicken is great when served over white or brown rice. Each ½ cup of cooked rice will add 2 POINTS per serving.
