New Potato Salad

Ingredients:
12 small uncooked new potatoes or 6 cups
2 Tbsp olive oil
1/4 cup scallions
1/4 tsp black pepper
1 tsp dried dill weed
Instructions:
Boil scrubbed potatoes until fork-tender (about 25 minutes). Drain potatoes and let cool for 20 minutes. Then cut potatoes into quarters and mix with remaining ingredients. Chill at least two hours before serving.
Special Information:
This recipe should yield five servings of just a little more than 1 cup each. Keep this in mind when counting out your potatoes. You should be using no more than 6 cups worth of potatoes. Adjust the number of potatoes you use based on their size.
