Raisin Spice Muffins

Ingredients:
1 box carrot cake mix
7 oz Trader Joe's High Fiber cereal or ½ box Fiber One cereal (1 pouch)
2 cups water
15 oz canned pupmkin
1/3 cup Egg Beaters Refrigerated Egg Whites or 2 egg whites
2 1/2 tsp baking powder
3 Tbsp pumpkin pie spices or apple pie spices
1 cup raisins
1/2 cup chopped pecans
Instructions:
In a large bowl, soak the cereal in the water for about 15 minutes. The cereal should become very soft and the water will be absorbed. Add the baking powder, pumpkin pie spices, and cake mix to the softened cereal and mix thouroughly. Transfer mixture into the bowl of an electric mix. Add the pumpkin and the egg whites. Mix on medium low. The batter will be thick and somewhat lumpy. Stir in raisins and chopped pecans.
Spray muffin tins or silicon baking cups with non-stick cooking spray or use baking papers. Fill each cup ¾ full.
Bake at 350° for 30 minutes.
Use toothpick test to check for doneness.
Special Information:
When using silicone baking cups there is no need to use papers. However, I do spray the inside of the cups with butter flavored nonstick cooking spray so that they brown a little bit more. For added sweetness you can sprinkle a small amount of sugar and cinnamon over each muffin, using no more than 1 ½ Tbsp for all 24 muffins. Again, lightly spray the cooked muffins with butter flavored nonstick cooking spray so that the cinnamon and sugar will stick. This will not increase the POINTS value of the muffins. Or, you can use the new cinnamon spice flavored Splenda the same way.
