Gingered Quinoa

Ingredients:
2 cups water
1 cup uncooked quinoa, rinsed
1 cup carrots, diced
½ cup scallions, diced
4 tsp ginger root (jarred or fresh), minced
½ cup orange juice, squeezed fresh with pulp
½ cup cilantro, chopped
½ tsp table salt
salt and pepper to taste
Instructions:
In a large sauce pan over high heat, bring water, carrots, quinoa, and 1/2 tsp of salt to a boil. Cover, reduce heat and simmer for 10 to 15 minutes or until quinoa is translucent and tender.
Spray a skillet with non-stick olive oil spray. Over medium-high heat, sauté scallions and ginger for 2 minutes. Add small amounts of water, if needed, to avoid burning. Stir in quinoa. Cook, stirring constantly, until well mixed and heated through.
Remove skillet from heat. Stir in orange juice, orange pulp and cilantro. Add salt and pepper to taste. Serve immediately.
Yields about ¾ cup per serving.
