Fiery Fruit Salsa

Ingredients:
½ medium sweet red pepper, seeded and chopped
1 medium red onion, finely chopped
2 cups pineapple, cubed
1 cup cantaloupe, cubed
½ cup mango, cubed
2 Tbsp lime juice, about the juice of 1 lime
½ cup cilantro
½ small jalapeño pepper, minced
½ tsp salt, or to taste
1 tsp chipotle chile pepper powder or hot Mexican-style chili powder, or to taste
Instructions:
In a large bowl, combine pineapple, cantaloupe, mango, onion, red pepper, jalapeño pepper, cilantro, and lime juice. Stir gently. Sprinkle salt and chile powder over the ingredients. Stir gently. Refrigerate for at least an hour, or up to 24 hours, before serving.
Yields about 1 cup per serving.
Special Information:
Make this salsa as hot or as mild as you like. For hotter salsa, use the entire jalapeño pepper and add some red pepper flakes. For milder salsa, use a milder pepper or no pepper at all. You can also use more or less chile powder without changing the POINTS value per serving.
This salsa may be used with grilled, broiled, or baked fish, shellfish, chicken or pork. Or, serve it as a stand-alone side dish.
