Eggplant Surprise

Ingredients:
1 medium raw eggplant
1/2 cup shredded fat-free mozzarella cheese
4 tsp olive oil
2 tsp garlic powder
2 tsp McCormick's Vegetable Supreme
2 tsp Cajun seasoning
1/4 tsp table salt
2 Tbsp cornflake crumbs or Shake'n'Bake garlic & herb mix

Instructions:
Cut eggplant into as many 1/4" thick disks as is possible.  Then in a large frying pan, heat 2 tsp of oil on medium high.  Place eggplant into pan and sprinkle half of each of the spices over the eggplant.  After that side browns, pour the remaining 2 tsp of oil over the eggplant and turn each piece.  Sprinkle remaining spices, cornflake crumbs, and cheese over the eggplant.  Eggplant is done when the bottom side is brown and cheese is melted.  Entire cooking time is about 10 minutes.

Special Information:
A serving size is 1 quarter of the entire eggplant.  Feel free to use your imagine with the spices.  Substitute Creole seasonings, Italian seasonings or even Tace seasonings.  If you want to keep it simple use garlic powder, salt and pepper.

The surprise with this eggplant is how easy it is to make and how good it tastes!  The low POINTS value is pretty surprising, too!
