Servings: 6
Unofficial POINTS per serving: 5
Ingredients:
1½ lbs.boneless, skinless chicken breast
¼ cup celery, finely chopped
½ cup onion, finely chopped
1 box Stove Top Traditional Sage stuffing mix
16 oz frozen French cut green beans, thawed
10¾ oz 98% fat free condensed cream of mushroom soup (1 can), undiluted
7 oz canned mushrooms, undrained
1 cup hot water
½ tsp garlic powder
½ tsp savory
½ tsp salt, or to taste
½ tsp course ground pepper, to to taste
Instructions:
Cut chicken into bite sized pieces and begin browning in a large skillet. Add onion, celery, garlic powder, savory, salt, and pepper to the skillet and continue cooking until vegetables are tender. Use nonstick cooking spray or a small amount of water to keep chicken from burning. Sprinkle ½ cup of dry stuffing mix evenly onto the bottom of a 9 x 13 baking dish prepared with nonstick cooking spray. In a medium bowl, combine remaining stuffing mix with water. Stir until moistened and set aside. Place chicken pieces on top of the dry stuffing mix in the baking dish. In another bowl, mix together soup, green beans, and mushrooms with their liquid. Spoon mixture over chicken. Top with the moistened, prepared stuffing.
Bake at 400º for 30 minutes or until chicken is cooked through.
Special Information:
To cut down prep time, don't brown the chicken, onions and celery. Place them directly in the bottom of the prepared baking dish. Sprinkle spices over the top and continue with the instructions above.
