Chicken Cordon Bleu

Ingredients:
4 boneless, skinless chicken breasts, 4oz each
4 Laughing Cow Light Creamy Swiss cheese wedges (any flavor)
Deli Select Brand Honey Baked or Brown Sugar Ham, 12 slices
4 Tbsp. Shake'n'Bake coating (Original or Garlic & Herb)
Instructions:
Pound each chicken breast until thin. Lay three slices of ham across each pounded breast. Place 1 cheese wedge at the narrow end of each breast on top of the ham. Carefully roll up the chicken around cheese and ham. Secure the rolled breast with toothpicks. Put 1 tablespoon of Shake'n'Bake coating on a plate and gently roll 1 prepared roll-up through the coating. Repeat with each roll-up, using about 1 tablespoon of coating for each. Spray the bottom of a shallow baking dish with Pam or similar spray and place the 4 coated roll-ups, seam side down, in the baking dish.
Bake at 375° for 45 minutes.
Special Information:
Increase the portion size by using 6oz chicken breasts and increase the POINTSPlus value to 7 per serving.
