Anytime Chili

Ingredients:
1¼ lbs. extra lean ground beef, 5% fat
28 oz canned diced tomatoes (2 cans)
15 oz canned pinto beans, undrained
15 oz canned cannellini beans, undrained
1 medium onion, diced
1 medium sweet red pepper, diced
3 garlic cloves, minced
3 Tbsp fresh cilantro, chopped
1 Tbsp chili powder, or to taste
2 tsp ground cumin, or to taste
1 tsp salt, or to taste

Instructions:
In a large dutch oven over medium heat, begin browning hamburger.  Add garlic, onion, and peppers.  Cook until beef is cooked through and onion and peppers are tender, about 7 minutes.  Add tomatoes, beans, spices, and cilantro cook about 5 minutes or until heated through.

Yields about 1½ cups per serving.

Special Information:
I use 1 can of diced tomatoes, with garlic and onion, and 1 can of diced tomatoes, zesty chili style, but you can use plain diced tomatoes if you prefer.  To make this chili hot you can add a minced jalapeno pepper.

Serve this chili by itself or topped with 2 Tbsp of fat-free sour cream with no change in POINTSPlus values.  Add 2 Tbsp of low-fat shredded cheddar cheese for an additional 1 POINTSPlus per serving.
