Bruschetta Chicken Casserole

Ingredients:
1 box Chicken Flavor Stove Top Stuffing
1½ lbs. boneless, skinless chicken breast, cut into bite-size pieces
½ cup onion, diced
14½ oz canned diced tomatoes (1 can), undrained
1 cup shredded fat-free mozzarella cheese
¼ cup Kraft 2% Milk shredded Italian blend cheese
½ cup hot water
2 cloves garlic, or to taste, minced
2 tsp dried oregano, or to taste
2 tsp dried basil, or to taste
Instructions:
Dump stuffing mix into a medium size bowl. Add water and undrained tomatoes to the stuffing and mix together. Set aside. Brown cubed chicken, onion, and garlic in nonstick cooking spray over medium heat. Spray a 9x13 casserole dish with nonstick cooking spray. Place chicken mixture in the bottom of the prepared dish. Sprinkle basil, oregano, and mozzarella cheese over the chicken mixture. Top with stuffing, spread evenly.
Bake at 400° for 30 minutes.
Bake uncovered. Sprinkle ¼ cup of Italian blend cheese over the top of the casserole during the last 5 minutes of baking.
Special Information:
For larger portions, decrease the number of servings from 6 to 4 and increase the POINTS value per serving to 8. Just know, these will be LARGE portions!
To cut down prep time, don't brown the chicken, onion, and garlic. Place them directly in the bottom of the prepared baking dish. However, the onion should be minced rather than diced if you do this.
