Crispy Crunchy BBQ Fish (but it's baked!)

Ingredients:
1 lb. halibut or sea bass (2 fillets, 8 oz each)
1 tbsp fat-free mayonnaise
½ tbsp barbecue sauce
1 oz barbecue-flavor potato chips (1 cup, about 15 chips)

Instructions:
Preheat oven to 425º.  Line broiler pan and rack with foil.  Stir together mayo and barbecue sauce in a small bowl.  Place halibut fillets (skin side down, if present), on the broiler rack and pat dry.  Spread mayo mixture evenly over the top of each fillet.

Place potato chips in a large zip-close plastic bag.  Coarsely crush chips with a rolling pin, meat mallet, or your hands.  Top each fish fillet evenly with half of the crushed chips and lightly spray with nonstick cooking spray.  Bake until fish is just opaque in the center, about 12 minutes depending on thickness.

Preheat the broiler.  Broil fish about 5 inches from the heat until the potato chip topping is lightly browned, about 30 to 60 seconds.

Special Information:
This recipe is great with sea bass, cod, or halibut.  However, the type of fish you use can affect the POINTS value per serving.  Made with cod, which is a less expensive and more readily available fish, the POINTS value per serving is 6.  The bake time for cod is less, too, because the fillets are thinner.

To make this recipe for 4 with slightly smaller portions and a lower POINTS value per serving, double the amount of fat-free mayo, barbeque sauce, and potato chips with four 6oz pieces of either halibut or sea bass.  The cook time and technique stay the same and the POINTS value per serving decreases to 5.  If using cod, the POINTS value decreases to 4 per serving.
