Black Bean Brownies

Servings: 16 - 20
Unofficial POINTSPlus per serving: 4
Ingredients:
1 box Betty Crocker Low-Fat Fudge Brownie mix, family size
15 oz canned black beans, undrained

Instructions:
Preheat oven to 350° and spray a 9x13 pan with non-stick cooking spray.  In a blender or with an immersion mixer, puree black beans.  Combine brownie mix and beans by hand in a large bowl. Stir until well mixed.  Batter will be lumpy.  Pour batter into prepared pan and bake for 26 to 28 minutes or until a toothpick inserted 2 inches from the side of the pan comes out almost clean.

Yields the following:
   29 - 40 brownies ~ 2 ppvs each
   21 - 28 brownies ~ 3 ppvs each
   16 - 20 brownies ~ 4 ppvs each
   13 - 15 brownies ~ 5 ppvs each
   12 brownies ~ 6 ppvs each
   10 brownies ~ 7 ppvs each

Special Information:
This is a great way to make "healthier" brownies.  However, they are still just "treats" and should be eaten in moderation. These brownies are very moist and there's absolutely no "black bean" taste to them at all.

This recipe is brand specific.  To get the POINTSPlus values mentioned above, you must use the Betty Crocker Low-Fat Fudge Brownie mix.  Other mixes have different fat and calorie contents in the mix, some lower but some higher.  Do not use any mixes that have added chocolate or nuts in the mix as this will definitely raise the POINTSPlus values.
